Prep
Rinse the potatoes thoroughly in water.
Boil or steam the potatoes until they are fork-tender and easily mashable.
Drain the water from the cooked potatoes and let them cool.
Peel the cooled potatoes and mash them in a mixing bowl using a fork or potato masher.
Cooking
Mix the mashed potatoes with chopped green chillies, coriander leaves, red chilli powder, garam masala powder, dry mango powder, cumin powder, and salt.
Adjust the seasoning if needed.
Butter half of the bread slices generously.
Spread the potato mixture on the buttered slices.
Cover with the remaining buttered bread slices.
Lightly butter the top of the sandwiches.
Place the sandwiches with the buttered side down.
Butter the top of the facing bread slices and grill until the sandwiches are golden and crisp.
Serve hot.
