A light and savory rice dish made with freshly grated coconut, cashews, lentils, herbs, and spices.
Cooked White Rice

Fresh Shredded Coconut
0.5 cup

Coconut Oil

Cooking
Heat oil in a pan.
Add mustard seeds and urad dal; let them splutter and fry until golden.
Quickly sauté curry leaves, green chilli, and red chilli for 2 minutes over low flame.
Add cashews and fry until they turn golden.
Introduce the coconut and sauté for 2 minutes over low heat, ensuring it doesn't change colour.
Finally, add the cooked rice along with the required salt and toss well until thoroughly combined.
