A popular mild and comforting Gujarati dish that is made by steaming a batter of besan flour, curd, and spices.

Prep
Combine ginger and green chilies in a grinder to make a paste.
Mix besan, rava, salt, ginger, green chili paste, and curd in a bowl.
Add water to this to achieve a pourable consistency. There should be no lumps.
Add lemon juice and add Eno fruit salt and mix well.
Cooking
Pour the batter into a greased tray.
Place the tray on top of the idly steamer and steam it for 10 to 12 minutes.
Carefully open and insert a toothpick into the middle, if it comes out clean, it is cooked. If it remains sticky, steam it for a few more minutes.
Let it cool for five minutes, lightly scrape the sides and invert the pan and it will come out clean.
Add the tempering ingredients in oil and add to the dhokla.
Finally, garnish with coriander leaves and grated coconut.
Serve after cutting into squares, as a breakfast or snack.
