A comforting and flavorful dish where hard-boiled eggs are simmered in a fragrant and rich curry sauce, creating a satisfying and protein-packed meal that pairs well with rice, bread, or roti.

Prep
Peel the boiled eggs and keep them aside.
Make a paste of onion, ginger, garlic and green chilli.
Cooking
Heat oil in a kadai(wok); add in the onion garlic and ginger paste and sauté for a few minutes.
Add in the turmeric, garam masala, coriander powder and red chilli powder and mix well.
After 3 to 4 minutes, add in the tomato puree, salt and eggs and simmer covered for 10 to 15 minutes.
Add the chopped coriander leaves and serve.
