An Indian-style macaroni recipe that uses onion, tomatoes, a variety of vegetables, and spices.

Prep
In a pan, heat water and salt and bring to a boil.
Add macaroni, stir and begin to cook on medium to high flame till they are al dente – meaning they should have a slight bite to them.
Drain all the water and keep cooked macaroni aside.
Cooking
Heat oil in a pan, add minced garlic and sauté till its raw aroma goes away, do this on low flame.
Add finely chopped onions and sauté on a medium-low flame till they become translucent.
Add finely chopped tomatoes, mix and cover the pan with a lid. Keep the flame on a low till they soften and become pulpy.
Add spices and sauté for some seconds, then add mixed vegetables, green peas and salt as per taste. Mix.
Pour water, mix again and cover the pan with a lid. Let it simmer till the vegetables are cooked. Do keep checking in between.
Once the vegetables are cooked and tender, add the cooked macaroni, mix well and cook for a few more minutes till all the water is absorbed. Stir occasionally.
Lastly add mixed dry herbs – basil, thyme, oregano, parsley. mix again.
Check the seasonings and add more salt or herbs if required. Garnish the pasta with some finely chopped coriander leaves.
