A popular Indian dishes which is made with smooth spinach sauce and tender paneer cubes.

Prep
Rinse the spinach leaves well and discard tough stems.
Boil water with salt and blanch the spinach for 1 minute.
Transfer spinach to ice-cold water to retain color.
Drain spinach and blend with ginger, garlic, and chilies to make a smooth puree.
Cooking
Heat some ghee in a pan.
Add cumin seeds (jeera) and bay leaf, let them splutter.
Add onions and saute until golden.
Add garlic and sauté saute until its raw smell disappears.
Add tomatoes and turmeric powder, chili powder, and asafoetida (hing). Sauté until tomatoes soften.
Pour in the spinach puree, add water, and simmer for 6-7 minutes.
Season with salt and add garam masala.
Add paneer cubes and cook briefly.
Stir in low-fat cream, garnish, and serve hot.
