A classic dish featuring tube-shaped pasta tossed in a flavorful tomato sauce with mushroom, olive, herbs & seasonings cooked al dente .
Whole wheat pasta - dry
Pitted Green Olives
Pitted Black Olives
Extra Virgin Olive Oil
Boil the pasta in enough salted water, drain and set aside.
In a pan, heat the olive oil on low to medium heat, add the sliced onions and sauté, stirring often, until they become lightly golden.
Add the crushed garlic and sauté for around 15 to 20 seconds.
Add the chopped tomatoes, salt, black pepper, and oregano, mix well and sauté for 15-20 minutes until tomatoes are mushy and pulpy.
Add the chopped button mushrooms and cook on low to medium heat for about 10 to 12 minutes.
Add the olives and cook over low heat for 2-3 minutes.
Add the cooked penne pasta with tomato and mushroom sauce and serve.
