Prep
In a deep bowl, combine besan and water; .
Set aside for later use.
Cooking
Heat oil in a deep non-stick pan.
Add garlic and sauté for 30 seconds on medium flame.
Add cumin seeds (jeera) and curry leaves, sauté for another 30 seconds.
Add green chillies and onions, and sauté for 1 minute.
Mix besan-water mixture, turmeric, coriander, and salt.
Cook for 2 minutes, stirring continuously.
Cover with a lid, cook for an additional 1 minute and serve immediately.
