A flavorful, savory, and delicious potato dish in which the potato is sauteed with various fragrant spices and herbs.
Potatoes
1 cup
Cold Pressed Olive Oil
1.25 Tbsp
Turmeric
0.125 tsp
Red Chilli Powder
0.25 tsp
Coriander Powder
0.25 tsp
Cumin Powder
0.25 tsp
Asafoetida
1 pinch
Garam Masala
0.125 tsp
Dry Mango Powder
0.25 tsp

Prep
Wash potatoes and peel and cut them into small cubes and place them in a bowl of water for 20 to 30 mins.
Cooking
Heat a heavy thick thick-bottomed pan (kadai) and add oil.
Drain water from the potatoes, add them to the pan and mix well.
Saute for 7 to 8 minutes on low to medium-low flame till the potatoes are half done.
Add turmeric powder, Kashmiri red chili powder, coriander powder, cumin powder, asafoetida and salt as per taste and mix well.
Cook till potatoes are tender and slightly crisp.
Add garam masala powder, dry mango powder, mix very well and switch off the flame.
