A delicious and instant South Indian pancake made with semolina (rava) batter, mixed with vegetables, and cooked until golden and crispy.

Prep
In a large mixing bowl, add semolina, yoghurt, and salt, mix well.
Gradually add water while stirring continuously until you get a smooth batter of pouring consistency.
Let the batter rest for 15-20 minutes.
Prepare the toppings by chopping onions, tomatoes, green bell peppers, green chillies, and coriander leaves.
Cooking
Heat a non-stick tawa (flat pan) or iron tawa on medium heat and drizzle a few drops of oil on it.
Once hot, pour a ladleful of the prepared batter onto the center of the tawa and spread it such that it is thick like a pancake.
Sprinkle some chopped onions, tomatoes, green bell peppers, green chilies and coriander leaves on top of the uttapam and lightly press into the batter.
Drizzle a few drops of oil around the edges of the uttapam and on the toppings.
Cover and let it cook on medium heat until the bottom turns golden brown.
Flip the uttapam and cook the other side until it is cooked through and crispy.
Remove the uttapam from the tawa and serve hot.
