A popular street food from Mumbai made with sauteed rice, vegetables, pav bhaji masala, and other spices and herbs. It is the most cherished and flavorful rice dish that can be easily made from leftover rice.
Raw Basmati Rice

Prep
Rinse and soak rice in water for 20-30 minutes, then drain.
Cook the soaked rice with salt and oil until the grains are separate and well-cooked.
Drain any excess water and cover the rice to keep it warm.
Cooking
Steam carrots, potatoes, and green peas until cooked, then peel and chop the carrots and potatoes.
In a pan, melt butter and fry cumin seeds (jeera) until brown.
Add chopped onions and sauté until translucent.
Stir in ginger-garlic paste and cook until the raw aroma disappears.
Add finely chopped tomatoes and bell pepper (capsicum).
Add turmeric, red chili powder, and pav bhaji masala. Cook until butter releases from the sides.
Add chopped potato, carrot, and peas. Sprinkle salt and stir.
Add the cooked basmati rice and mix gently with the veggies.
Garnish with coriander leaves and sprinkle lemon juice on top. Serve hot.
